Chicken Tikka Masala Recipe
For the Marinade:

30 g ground cumin

30 g ground coriander

500 g boneless chicken thighs

20 g salt

10 g turmeric
-
40 g garlic and ginger paste

200 g yogurt
-
40 g white wine vinegar
-
10 g white pepper
For the Sauce:
-
20 g yogurt
-
20 g garlic and ginger paste
-
150 g onion
-
10 g turmeric
-
350 g tomato
-
10 g red paprika
-
10 g ground cumin
-
10 g ground coriander
-
A splash of chicken stock
Preparation:

Marinate the chicken:
Cut the boneless chicken thighs into chunks and place them on a dish.
In a bowl, mix all the marinade ingredients and pour over the chicken.
Let marinate for 6 hours. -
Make the sauce:
In a pan, sauté the onion, tomato, and garlic-ginger paste.
Add the spices and yogurt, then stir in a splash of chicken stock.
Cook gently over low heat. -
Cook the chicken:
Remove the chicken from the marinade and place it on a baking tray.
Roast in the oven at 180°C (350°F) for 15 to 20 minutes.
Once done, add the roasted chicken to the sauce and simmer for a few more minutes on low heat.
