Chicken Tikka Masala Recipe


For the Marinade:

  • 30 g ground cumin

  • 30 g ground coriander

  • 500 g boneless chicken thighs

  • 20 g salt

  • 10 g turmeric

  • 40 g garlic and ginger paste

  • 200 g yogurt

  • 40 g white wine vinegar

  • 10 g white pepper


For the Sauce:

  • 20 g yogurt

  • 20 g garlic and ginger paste

  • 150 g onion

  • 10 g turmeric

  • 350 g tomato

  • 10 g red paprika

  • 10 g ground cumin

  • 10 g ground coriander

  • A splash of chicken stock


Preparation:

  1. Marinate the chicken:
    Cut the boneless chicken thighs into chunks and place them on a dish.
    In a bowl, mix all the marinade ingredients and pour over the chicken.
    Let marinate for 6 hours.

  2. Make the sauce:
    In a pan, sauté the onion, tomato, and garlic-ginger paste.
    Add the spices and yogurt, then stir in a splash of chicken stock.
    Cook gently over low heat.

  3. Cook the chicken:
    Remove the chicken from the marinade and place it on a baking tray.
    Roast in the oven at 180°C (350°F) for 15 to 20 minutes.
    Once done, add the roasted chicken to the sauce and simmer for a few more minutes on low heat.
